La Cuverie des Cîteaux, a seventeenth century monastic winery in the village of Savigny-lès-Beaune, stands as one of Burgundy’s evocative architectural witnesses to the dialogue between labor, devotion, and transformation. Built by the Cistercian monks of the nearby Cîteaux Abbey, the cradle of the Cistercian Order founded in 1098, the Cuverie once existed at the heart of monastic viticulture.
Here, grapes from surrounding vineyards were pressed, fermented, and barrelled beneath vaulted timbers darkened by centuries of use. The building’s form was shaped by the cyclical work of cultivation and rest, its enduring materials holding the memory of both human and elemental touch.
